Created by Christian Bienner just a few years ago, Les Vins Pirouettes promotes the growth of organic and biodynamic fruits across Alsace. Thanks to this project, producers can avoid selling their grapes to large cooperatives and, instead, direct them towards the production of quality natural wines. Brutal by Jean Marc is made from organic Gewürztraminers, Pinot Gris and Riesling (average age 40), rooted in clay and limestone. The fruits are harvested by hand, peeled and fermented with local yeast. 18 days of maceration of the films give the wine a beautiful pink hue and a tenacious texture on the palate. The stretch is carried out for 11 months on a fine lees in traditional Alsatian food. No sulfur added.
